Easy Chocolate Peanut Butter Fudge

This stuff is seriously dangerous. Partly because it’s so easy to make and partly because it’s so easy to eat. It’s adapted from a recipe known as “Primal Fudge.” Usually I’m not even the biggest fan of chocolate and peanut butter but it was tea time and I wanted something sweet. All of these ingredients were just lying around in my pantry just waiting to become something awesome.

What you need:

1/2 cup coconut oil

1/2 cup cocoa powder

1/2 cup peanut butter

1/4 cup maple syrup

1/4 tsp vanilla

The original recipe calls for almond butter instead of peanut butter. You can also use honey instead of maple syrup.

What you do:

1) Melt the coconut oil

2) Throw everything into a blender and mix

3) Pour mixture into cupcake liners (or into a baking dish and cut into squares once chilled)

4) Chill in fridge (30 min) or freezer (10 min)

5) Store leftovers (what are those?) in an airtight container in the fridge

So they didn’t end up looking like the ones I’ve seen on Pinterest. I think my mixture was thicker than it’s supposed to be because I wasn’t actually able to “pour” it into the cupcake liner. I had to scoop it in. I don’t know if this was due to the fact that I used peanut butter instead of almond butter or to my far from perfect culinary skills. I don’t think the consistency really matters though, or aesthetics for that matter, they tasted amazing!

This fudge totally reminds me of those Icy Square chocolates. My grandma always has them out at Christmas. And I’m even telling myself that they are healthy treats. They’re made up of antioxidants, good fats, protein…it would almost be wrong if I didn’t make them. 😉

Oh and one more thing…other Primal Fudge recipes don’t seem to mention this…but make sure you eat some right out of the blender when it’s all warm and gooey deliciousness. Yum.
