Why the search for healthy cookies you might ask?
Me – in a never ending struggle with my weight, a battle with my sweet tooth, can’t drink a cup of tea without a cookie to go with it.
Oliver – wants to do everything we do, eat and drink everything we eat and drink.
My husband – will eat any three ingredient concoction as long as one of the ingredients is chocolate.

I found these little gems on Pinterest and the original recipe can be found at The Burlap Bag. Here’s a quick run down:
Preheat oven to 350 degrees
1) 2 ripe bananas – mush ’em up with a fork
2) 1 cup of oats (give or take depending on size of bananas)
3) handful of chocolate chips
Bake for 15 min. Done and done. I throw a piece of parchment paper on the cookie sheet to keep them from sticking and that way I don’t even have to wash the cookie sheet. Ha!
They are so easy to make and surprisingly satisfying. You could add whatever you want. I’ve also made them with an applesauce base instead of banana and cinnamon instead of chocolate chips. Not as tasty but not half bad either.
